Mashed Cauliflower Recipe – The Easiest Way to Get Your Family to Eat Cauliflower

mashed-cauliflower-recipeMashed cauliflower is the easiest thing to make and you really don’t need a specific recipe. It’s all about seasoning to your liking.

I just chop up the cauliflower into large chunks, boil until it’s soft (about 30 minutes or so).  Then I place the cauliflower in a large bowl and use a masher to mash it all up. If you really want them whipped up nice like real mashed potatoes- I suggest putting the boiled cauliflower into a food processor and pulsing.

I season mine to my liking with garlic, salt, pepper, vegan Earth Balance butter.  You can sprinkle some Daiaya vegan shredded cheddar on top!

Why should you and your family eat more cauliflower? 

Cauliflower has been called the world’s healthiest food!  It offers array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals but it’s real claim to fame is that it can fight cancer.  The excerpt below is from Dr Mercola.  He’s one of the foremost experts on health, wellness and nutrition.  Here is is what he has to say about Cauliflower:

Cauliflower contains sulforaphane, a sulfur compound that has also been shown to kill cancer stem cells, thereby slowing tumor growth. Some researchers believe eliminating cancer stem cells may be key to controlling cancer.

For instance, research has shown that combining cauliflower with curcumin (the active compound in the spice turmeric) may help prevent and treat prostate cancer.1

A study published in Carcinogenesis also found sulforaphane may reduce the incidence and rate of chemically induced mammary tumors in animals.2 It also inhibits the growth of cultured human breast cancer cells, leading to cell death.

Other compounds in cauliflower also show anti-cancer effects. According to the National Cancer Institute:3

“Indoles and isothiocyanates have been found to inhibit the development of cancer in several organs in rats and mice, including the bladder, breast, colon, liver, lung, and stomach.”

 

Gluten Free Vegan Blueberry Chocolate Chip Muffin Recipe

Vegan Gluten Free Dessert RecipeWe all know that gluten free baking is easier than ever. But did you know how easy it is to bake vegan style?  One of my favorite products to use for vegan baking is Ener-G Egg Replacer.  This product contains NO egg or animal protein. It’s also gluten free and wheat free.  It’s perfect to replace eggs in muffins, cakes, quiches, cakes, pancakes and more.

So this morning I was in the mood to make something light and sweet- something to have after dinner with some tea or coffee.  So I decided blueberry muffins with some vegan mini chocolate chips would be the perfect treat!

Vegan Gluten Free Dessert RecipeThey are very easy to make and bake up in about 25 minutes.  Here is the recipe!

  • 1-2/3 cup Oat Flour (sifted)
  • 2-1/2 teaspoons baking powder (sifted)
  • 1/2 teaspoon salt
  • 1 teaspoon Ener-G Egg Replacer
  • 1-1/4 cups Almond Milk (or non dairy milk of choice)
  • 4 tablespoons olive oil
  • 1 tablespoon agave or maple syrup
  • 1 cup blueberries
  • 1/2 cup mini vegan chocolate chips

Preheat oven to 400 degrees.  Combine first 3 ingredients in one bowl.  In another bowl, mix the Ener-G Egg Replacer with 2 tablespoons of water then add the milk, olive oil and syrup.  Add all at once to the dry ingredients and combine until all blended together.  Lastly gently fold in blueberries and chocolate chips. Fill greased muffin pans about 2/3 of the way.   Bake for about 25 minutes.  Enjoy :-)

Green smoothies are all the rage right now!  Getting your greens has never been tastier!  There are many fancy green smoothie recipes out there and we love many of them.  But- to be honest- sometimes the taste of raw greens can be a little less than desirable.

Why You Should Eat A More Vegetarian Diet

Greens, asparagus, lentils, chickpeas and dried cranberries provide a range of vitamins, protein, fiber and antioxidants for a healthy diet.

In yet more disgusting and disturbing news about the meat products in the US, Reuters published an article today stating that Europe’s health nominee has said he will NOT import ‘chlorine chicken’ from the US.  How disgusting does that sound?  Chlorine chicken?  Apparently it’s a process of disinfecting meat here in the US with chemicals, and Europe wants nothing to do with meat of such sorts.

Europe uses antibiotics to treat their meat…do we think that it’s much better? Not really.  Perhaps

How to Choose The Best Diet For You

Now a days it seems like almost everyone wants to lose weight and live a healthier lifestyle.  That’s great!  But with so much information out there about different diets and lifestyles, how do you know what to choose? It gets very confusing, especially, listening to the media about health and diet.  One day eggs are bad for you, the next day they aren’t so bad.  One day you should replace white flour with wheat, and then they say that wheat is horrible for you. It’s easy to see why people are confused about what to eat.

There are many different popular diets you could follow to get healthy and be fit.  Some of the most popular right now are Paleo, Vegan/Vegetarian and Mediterranean.  How do you know which one to choose?  Typically we like to first assess someone’s lifestyle, likes and dislikes.  If you hate fish, the Mediterranean diet won’t be good for you.  If you can’t live without your morning cereal, oatmeal or toast- the Paleo diet won’t be a good fit either.  But- you can still enjoy the healthy benefits found in each diet by picking and choosing the components that can work with your lifestyle. We think the best option is to take a look at what your current eating habits are now, see what  needs to be modified in order to lose weight and be healthy, and then pull the best components from each plan to piece together a customized diet that works for YOU.

We love to combine the best elements from Paleo, Vegan/Vegetarian and Mediterranean to create customized weight loss meal plans.  Here are are the reasons why we like to pull a little bit from each one.

Paleo: This diet is spot on in removing refined flours, table sugar and processed food from our diets. So why eat them at all?  If we are creating a weight loss meal plan for you, we look to the Paleo plan to formulate a diet free of refined flours, sugar and processed foods.

Vegan/Vegetarian:  You don’t have to be a vegan or a vegetarian to enjoy the many health benefits of this diet. Everyone, and we mean everyone, can benefit from added plant based protein and nutrients in their meal plan.  Vegans eliminate animal based saturated fat from their diet and load up with healthy fats, protein and nutrients from plants.  Many foods in the vegan/vegetarian diet are very powerful in fighting and preventing chronic diseases.  Vegetables are some of the most powerful disease fighting foods on the planet.  Greens and cruciferous veggies are especially high on our list of foods to include in a meal plan.  As well as legumes and a small amount of beans.  We offer easy to follow recipes that create great meals out of high potency foods.

Mediterranean: The Mediterranean diet helps us get more Essential Fatty Acids in our daily meal plan by incorporating nuts, seeds, healthy oils and fish.  Omega 3 and Omega 6 are the fatty acids you hear about daily.  As Americans, we get too much of the Omega 6 acids and not enough of the Omega 3 type.  The Omega 3 fatty acids are found in fish like salmon and sardines as well as in nuts and seeds.  Incorporating some elements of the Mediterranean diet into your meal plan will help boost up the amount of Omega 3 fatty acids in your daily diet.  This diet has long been associated with with heart health and a longer lifespan.

Putting together a healthy meal plan that works with your lifestyle is like piecing together a puzzle.  You have to figure out which components will actually work for you and you have to make sure that the pieces of the puzzle fit together in a healthy way.

What Are The Best Protein Bars?

We received a great question from a Facebook fan of ours so we wanted to share our answer with everyone. The person stated, “I’ve been instructed to eat more protein to help me lose weight and gain lean muscle.  Which are the best protein bars out there?”

The first thing we want to say is that protein, vitamins, minerals, etc…whenever possible- should come from real, whole foods.  Good protein sources include chicken, beef, fish, nuts, beans, legumes, tofu, etc.

However, as hard as we try to be prepared each day, there are times when getting a clean, protein-based meal down your throat just isn’t possible.  Life can throw curve balls at you, and sometimes when that happens it can throw off our meal plan for the day.

quest protein barProtein bars are great emergency meals or snacks for when that happens.  They will give you a good dose of protein to help you refuel and tackle the day’s challenges.  And it certainly is better than grabbing fast food.  That said, not all protein bars are created equally.

Some protein bars are loaded – absolutely loaded with sugar.  Others are too high in sodium and then of course there’s always that raunchy list of ingredients that we can’t pronounce.  You want a good, clean protein bar with minimal ingredients, low sugar and little to no saturated fat.  The protein, carbs and healthy fat in the bar will be good sources of energy for your body.

One of our favorite protein bars is the Quest Protein Bar. It meets all of the above requirements with a huge variety of flavors too. There’s typically 10 or fewer ingredients, and nearly all look recognizable.   The one ingredient that doesn’t look familiar, Isomalto-Ogligosaccarides- are labeled as prebiotic fibers from plant sources.  Sounds good to us!

Quest bars give you about 20g protein with only 2 sugars (varies by flavor- we are looking at the Chocolate Peanut Butter flavor for this article). Keep one in your purse or in your glove compartment for emergencies. But, like we said, whenever possible, make sure your protein comes from whole food sources.
